Garlic Mashed Potatoes

7 cups cubed peeled baking potatoes
6 garlic cloves, peeled
1/2 cup 2 percent low-fat milk
1/4 cup grated Parmesan cheese
2 tbsp. margarine
1/2 tsp. salt
1/8 tsp. pepper

Place potatoes and garlic in a saucepan. Cover with water; bring to a boil.
Reduce heat. Simmer 20 minutes; drain. Return potatoes and garlic to pan. Add
remaining ingredients; beat at medium speed of a mixer until smooth.

Note: we usually double this recipe.
